GUILT - FREE NEW YORK CHEESECAKE 
2 (32 oz.) cartons vanilla yogurt
6 1/4 oz. box Health Valley fat free date delite cookies (ground into fine crumbs, about 1 1/2 c.)
1 1/3 c. sugar
1 tsp. vanilla
1 tsp. almond extract
4 tbsp. arrowroot
5 egg whites (or 2 eggs & 1 white)
21 oz. can cherry pie filling

Day before - Line colander or large strainer with coffee filters. Place both cartons of yogurt in colander. Put the colander in a bowl in the refrigerator. 24 hours later you will have yogurt "cheese".

Preheat oven to 300 degrees. Moisten fingers with water and press cookie crumbs over bottom and slightly up sides of 9 or 10 inch springform pan. Chill while preparing filling. With a mixer, beat yogurt, cheese, sugar, vanilla, almond extract, arrowroot and eggs until thoroughly blended.

Pour filling into crumb lined pan. Bake at 300 degrees for 60-75 minutes until center is set and surface is lightly browned. Remove from oven, cool to room temperature, refrigerate several hours until thoroughly chilled and top with pie filling. Serves 12.
