CHICKEN AND RICE | |
1 lb. chicken breasts, skinned and slivered 1 onion, chopped 2 tbsp. butter 1 sm. zucchini, cut into thin strips 1 clove garlic 1 1/2 c. chicken broth 1 tbsp. lemon juice 1/2 tsp. basil leaves 1 1/2 c minute rice 1 tomato, cut into sm. bites Salt and pepper to taste Saute chicken and onion in butter until browned. Add zucchini and garlic and cook 1 minute. Add broth, lemon juice, basil and seasonings. Bring to a full boil. Stir in rice, add tomatoes. Cover and remove from heat. Let stand 5 minutes. |
