BASIC BROILED FISH 
2 lbs. fresh fish fillets or steaks
1 lemon
1/4 c. melted butter
Salt and pepper

Cover broiler pan with aluminum foil. Brush foil with oil or shortening. Baste fillets with melted butter and juice from lemon. Sprinkle both sides with salt and pepper. Place fish on broiler pan. Broil about 4 inches from source of heat for 10 minutes per inch if fresh, 20 minutes per inch if frozen. Fish will be done when it flakes easily when tested with a fork. Baste once during broiling but do not turn. Makes 4 to 6 servings.

Variations: Sprinkle fish with oregano, rosemary, paprika, garlic, or green onions before broiling.

Sauteed vegetables may be placed on fish before serving.

Baste fish with a mixture of wine and herbs.

Baste fish with tomato sauce with garlic and spices.

Serve with a hot herb-butter sauce.
