HEAVENLY BROILED FISH 
2 lbs. skinless gray trout fillets or other fish fillets, fresh or frozen
2 tbsp. lemon juice
1/2 c. grated Parmesan cheese
1/4 c. butter, softened
3 tbsp. mayonnaise or salad dressing
3 tbsp. chopped green onion with tops
1/4 tsp. salt
Dash of liquid hot pepper sauce

Thaw fish if frozen. Place fillets in a single layer on a well- greased baking pan, approximately 15 x 10 x 1/2 inch. Brush fillets with lemon juice. Let stand for 10 minutes. Combine remaining ingredients. Broil 4 inches from source of heat for approximately 6 to 8 minutes. Remove from oven. Spread cheese mixture evenly over fish and continue to broil 2 to 3 minutes or until lightly brown and fish flakes easily when tested with a fork. makes 6 servings.
