LIGHT AND CRISPY CHICKEN 
4 chicken leg quarters, skinned
1 1/2 c. dry bread crumbs
1/4 c. grated Parmesan cheese
2 tbsp. minced fresh parsley
1/4 tsp. garlic powder
1/8 tsp. pepper
1/3 c. milk
Cooking spray

Rinse chicken with cold water and pat dry. Combine bread crumbs and next four ingredients, stirring well. Dip chicken in milk. Dredge in bread crumb mixture, coating well. Place drumsticks in a baking dish coated with cooking spray. Bake at 350 degrees for 1 hour or until tender. Makes 4 servings.
