COCONUT CREAM PIE 
1 1/2 c. sugar
4 tbsp. flour
2 c. milk
3 tbsp. butter
4 egg yolks, well beaten
1/4 tsp. salt
1 tsp. vanilla
1 c. coconut

MERINGUE:

4 egg whites
1/2 c. sugar
Pinch of salt

Mix sugar, flour and salt. Add egg yolks, milk and butter. Cook slowly, stirring constantly until thickened. Add coconut and vanilla. Pour into 2 (8") or 1 (10") baked pie shell. Add meringue by spooning around outer edges of filling to seal it in, spread rest over top. Sprinkle with coconut. Bake at 350 degrees until brown, approximately 15 to 20 minutes.

MERINGUE: Beat egg whites with salt until frothy. Add sugar gradually, beating constantly until stiff.
