DIETETIC SOMBRERO RICE 
2 pkg. cauliflower
1 (46 oz.) can tomato juice
Artificial sweetener to taste
1 tsp. dehydrated onions
4 tsp. green pepper
1/4 tsp. garlic powder
1 cube chicken bouillon

Cook cauliflower and drain. Mash or leave in small sections. Pour rest of ingredients over cauliflower and bake at 350 degrees for about 1/2 hour.
