BAKED RICE PUDDING 
2 c. milk
1/2 c. long grain rice
1/2 c. raisins
1/4 c. butter
3 beaten eggs
2 c. milk
1/2 c. sugar
1 tsp. vanilla
Cinnamon

In medium saucepan, bring 2 cups milk, uncooked rice and raisins to boiling; reduce heat. Cover and cook over very low heat about 15-20 minutes or until rice is tender. Remove from heat. Stir in butter until melted.

In mixing bowl, stir together eggs, 2 cups milk, sugar and vanilla. Gradually stir rice mixture into egg mixture. Pour into 6x10x2 inch baking dish. Bake in oven at 325 degrees for 30 minutes. Stir well, sprinkle with cinnamon. Bake for 15 to 20 minutes more until knife inserted near center comes out clean.
