BAKED RICE PUDDING | |
3/4 c. cooked rice 2 c. milk 1/3 c. sugar 2 tbsp. butter 2 eggs 1/2 c. raisins 1/4 tsp. salt 1/4 tsp. cinnamon 1. Beat eggs and sugar slightly. Add milk. 2. Add rice, butter, cinnamon and raisins. 3. Pour into buttered baking dish. 4. Set dish in pan half full of hot water. 5. Bake about 1 hour at 350 degrees. 6. Serve hot or cold with cream if desired. HOW TO COOK RICE: Put rice in pan and cover well with water. Bring to a boil and cook for a few minutes. Turn off heat and let stand on burner with a tight fitting cover until it absorbs the water - rinse with cold water. Store in refrigerator until ready to use. |
