BAKED RICE PUDDING 
2 c. milk
1/2 c. rice
1/4 c. butter
3 beaten eggs
2 c. milk
1/2 c. sugar
1 tsp. vanilla
1/2 tsp. salt
Nutmeg or cinnamon

Bring 2 cups milk and uncooked rice to boil; reduce heat, cover, and cook until tender. Remove from heat; add butter. In 10 x 6 x 2 inch baking dish. Mix egg, milk, sugar, vanilla, and salt. Gradually stir in rice mixture. Bake at 325 degrees for 30 minutes. Stir well and sprinkle with nutmeg or cinnamon. Bake for 15 to 20 minutes more or until knife comes out of center clean.
