PO-TUNAS 
2 lg. baking potatoes
1 c. mayonnaise
1/2 c. grated Cheddar cheese (save 1/2 of this for later use)
1/8 c. finely chopped onion
1 can solid pack tuna, drained

Bake potatoes until done (scoring potatoes around lengthwise with sharp knife before baking will make them come apart nicely for stuffing). Cut them in half lengthwise and scoop out inside of shell.

Lightly toss potato, mayonnaise, part of grated Cheddar, onion and tuna. Spoon back into shells (or may use ramekens). Lightly sprinkle rest of cheese on top. Bake at 400 degrees for 20-25 minutes.

(Can be done ahead of time, refrigerated and then baked about 30 minutes before serving.)
