PEACH OR PEAR CHUTNEY 
4 qts. finely chopped, peeled, peaches or pears
1 c. seedless raisins
1 c. chopped onions
2 to 3 c. brown sugar
2 tbsp. ginger
2 tsp. or pinch of salt
1 toe minced garlic (optional)
1 whole hot red pepper (leave that way) (remove before canning)
5 c. vinegar

Combine all and bring to a boil. Reduce heat and simmer 40 minutes. Stir a lot to keep from sticking. Pour, boiling hot, into hot jars and leave 1/4 inch head space - adjust hot tops (lids). Process 10 minutes in boiling water bath. Makes 7 pints. Use like A1, etc.
