PUMPKIN BREAD | |
2 2/3 c. sugar 4 eggs 1 c. canned pumpkin 2 tsp. baking soda 1 1/2 tsp. salt 1/2 tsp. mace 1/2 tsp. nutmeg 1 c. chopped pecans 1/2 c. brown sugar 1/2 c. chopped pecans 2/3 c. shortening 1 c. applesauce 3 1/3 c. flour 1/2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. cloves 2/3 c. apple juice 1 c. raisins 1 tsp. cinnamon Cream sugar and shortening. Add eggs one at a time, beating well after each addition. Stir in applesauce and pumpkin, sift together dry ingredients. Add alternately with apple juice. Stir in pecans and raisin. Pour into 2 well greased 9 x 5 inch loaf pans. Combine brown sugar, cinnamon, and pecans. Sprinkle on top of loaves. Bake at 350 degrees for 1 hour or more. Cool 15 minutes and remove from pan. |
