SCALLOPED POTATOES WITH HAM | |
6 potatoes, peeled and sliced very thin 1 lb. ham, cubed small Grated Parmesan cheese 4 c. white sauce (see below) WHITE SAUCE: 8 tbsp. butter 8 tbsp. flour 2 tsp. salt 1/2 tsp. pepper 4 c. milk (non-fat or skim is okay) Melt butter over low heat. Add flour, salt and pepper. Stir until well blended, a wire whisk is best. Gradually stir in milk. Cook, stirring constantly, until smooth and thickened. To assemble casserole: In a buttered glass 9x13 inch baking pan arrange single layer of potatoes. Sprinkle over with ham. Spoon thinly over with white sauce, spreading evenly. Repeat layers until pan is full. End with sauce. Top with Parmesan cheese. Bake 1 hour at 350 degrees. Cover with aluminum foil halfway throughout baking time. Serves 5 people. |
