TURKEY MEAT LOAF 
1 tbsp. vegetable oil
1 med. size onion, chopped
2 scallions, chopped
2 cloves garlic, minced
2 med. size carrots, diced
1 stalk celery, diced
1 sm. green bell pepper, seeded, diced
2 egg whites
1/2 tsp. salt (opt.)
1/2 tsp. ground black pepper
1/4 tsp. cayenne pepper
1/2 c. skim milk
1/2 c. catsup
2 lbs. ground turkey
3/4 c. dry bread crumbs

In medium size non stick skillet heat oil; add onion, scallions, garlic, carrots, celery and bell pepper. Saute about five minutes, let vegetable mixture cool. Heat oven to 350 degrees. In large bowl combine egg whites, salt, black and cayenne peppers, half the catsup and milk; using fork, beat until blended. To egg mixture add turkey, crumbs and cooled vegetables, using wooden spoon or hands. Mix ingredients together just until uniform. Lightly pack mixture into 9"x2"x3" loaf pan, slightly rounding top. Pour remaining catsup over top. Bake 50 minutes before slicing.
