CARROT COOKIES 
1 c. butter
2 c. brown sugar, packed
1 c. granulated sugar (white)
4 eggs, well beaten
4 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
4 c. oatmeal, uncooked
2 c. raisins
2 c. coarsely chopped carrots
2 c. chopped nuts

Combine butter, brown sugar, white sugar. Cream until light and fluffy. Add eggs one at a time; mix well. Sift flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add to butter mixture; mix well. Add oatmeal, raisins, carrots and nuts. Drop dough with tablespoon on greased cookie sheet. Bake at 350 degrees for 25-30 minutes.
