GINGER PEAR MUFFINS | |
2 c. flour 1/2 c. brown sugar, packed 1 tsp. baking soda 1/2 tsp. salt 2 tsp. ground ginger 1/8 tsp. ground cloves 1/8 tsp. ground nutmeg 1 c. plain yogurt 1/2 c. vegetable oil 3 tbsp. molasses 1 egg, beaten 1 1/2 c. fresh unpeeled pears, diced 1/2 c. raisins 1/2 c. chopped walnuts Preheat oven to 400 degrees. Combine flour, brown sugar, soda, salt and spices in a large bowl. In a separate bowl, mix yogurt, oil, molasses and egg. Fold liquid ingredients into the dry, mixing just until ingredients are moistened. Stir in pears, nuts and raisins. Spoon batter into greased or lined muffin tins, 2/3 full. Bake 20 minutes. Makes 12-18 muffins. These are so good when warm! |
