RUM BALLS | |
2 2/3 c. sugar 3/4 c. cocoa 4 tsp. instant coffee 4 tsp. rum extract 4 tbsp. hot water 7 c. oatmeal (regular) 1 lb. softened butter (you may use 2 sticks each of butter and butter) Mix all ingredients together with hands until all are blended well (no mixer). Chill for 1 hour in refrigerator (overnight would be better). Then roll into small balls (about 1 teaspoon of mixture). The rum balls may be rolled in finely chopped nuts or confectioners sugar. |
