AUNT IDA'S HAIMISHE HAMANTASHEN | |
FILLING: 2 to 3 pkgs. pitted prunes 1 1/2 c. dark raisins Prune juice 1/4 c. lemon juice 3 oz. chopped walnuts Stew dried fruits in 1/2 cup water, with added prune juice to more then cover fruit, until tender. Add lemon. Mash together. Mix in walnuts and keep filling covered to avoid evaporation. DOUGH: 3 eggs 1/3 c. oil 1 1/2 tbsp. honey 1/4 c. very warm water 1/2 c. sugar 4 c. flour 1 1/2 tsp. baking powder Sift together flour and baking powder. Mix all ingredients together. Knead on slightly floured board to form balls of dough. Divide ball into 3 parts. Form each into a ball. Keep unused dough under bowl. Roll out 1 part of dough on floured board with floured pin to a heavy cookie texture. Use cup or cookie cutter (sharp rim) 3 inch diameter to cut pockets for filling. Use 1/3 part of prepared filling to fill pockets. Use 1 heaping teaspoon filling to center of pocket. Fold 3 sides and pinch together to make a triangle. (Repeat with remaining dough). Put some flour on a cookie sheet lined with foil. Bake in oven 350 degrees about 15 to 20 minutes until nicely browned. Do not burn. Now you've got it! Hag Purim! |
