GAZPACHO BY BETTY 
4 slices bread, torn into pieces
4 lg. ripe tomatoes, chopped
2 med. cucumbers, chopped
1 med. green pepper, chopped
1 med. onion, chopped
1 c. water
1/4 c. olive oil
1/3 c. red wine vinegar
2 tsp. salt
2 cloves garlic, chopped
1 tsp. cumin, ground
1/8 tsp. pepper

Mix bread, 3/4 of tomatoes, 1/2 of the cucumber, 1/4 of the green pepper, 1/2 the onion, water, and oil in large bowl. Cover and refrigerate 1 hour.

Place 1/2 mixture in blender. Cover and blend on high 8 seconds. Repeat with remaining mixture. Stir in vinegar, garlic, salt, cumin and pepper; cover and refrigerate 2 hours. Serve with remaining ingredients as accompaniments.
