APPLE - NUT COFFEE CAKE | |
1/4 c. shortening (oleo ok) 1/2 c. granulated sugar 1 egg 1/2 tsp. vanilla 1 c. sifted all-purpose flour 1 tsp. baking powder 1/4 tsp. baking soda 1/8 tsp. salt 1/2 c. sour cream 3/4 c. finely chopped, peeled apple 1/4 c. chopped nuts 1/4 c. brown sugar 1/2 tsp. cinnamon 1 tbsp. butter In mixing bowl cream shortening and sugar together. Add egg and vanilla; beat well. Sift flour, baking powder, soda and salt together; add to creamed mixture alternately with sour cream. Fold in apples. Spread batter in greased 8 x 8 x 2 inch pan. Combine nuts, brown sugar, cinnamon and butter. Sprinkle over batter and bake at 350 degrees for 30-35 minutes. Can be frozen. To serve: Heat frozen coffeecake covered with foil at 350 degrees until warm through, about 30 minutes. Remove foil during last 10 minutes of beating. |
