BANANA CROQUETTES 
3 lbs. bananas
2 c. peanuts (ground coarsely)

Cut bananas in half. Dip into salad dressing then in ground peanuts. Fry in deep fat, and drain on paper towels.

SALAD DRESSING:

1 egg
1/4 c. white vinegar
1/2 c. water
1/2 c. sugar
1 tbsp. cornstarch

Mix dressing ingredients together and set aside.
