WAGON WHEEL COOKIES | |
1 (8 oz.) pkg. chopped dates 1/2 c. water 1/2 c. pecans, chopped fine 1/2 c. butter 1/2 c. sugar 1/2 c. brown sugar, firmly packed 1 egg, beaten 1 tsp. vanilla 2 c. all-purpose flour 1/2 tsp. baking soda 1/2 tsp. salt Combine dates and water and cook until thickened, stirring; remove from heat. Add pecans; cool. Cream butter and sugar, beating well; add egg and vanilla. Combine flour, soda, and salt and add slowly to butter mixture, beating well. Divide dough into 2 balls. Roll each into 8 x 8 inch squares. Spread the filling over dough, leaving a margin about 1/2 inch all around. Roll dough jelly roll fashion, pinching seam to seal. Wrap in wax paper and refrigerate overnight. Unwrap and cut into slices about 1/4 inch. Put on greased cookie sheet. Bake at 400 degrees for 8 to 10 minutes. Makes 5 dozen. |
