NEW ORLEANS BEIGNETS 
Preparation time: 15 minutes. Frying time: 2 to 4 minutes. Frying temperature: 375 degrees. Yields: about 2 dozen.

1/2 c. water
4 tbsp. butter
2 tsp. granulated sugar
Dash of salt
1/2 c. all-purpose flour
2 eggs
1 tsp. vanilla extract
Oil for frying
Powdered sugar

1. In saucepan over medium heat, combine water, butter, sugar and salt. Bring to a boil, stirring until butter melts.

2. Add flour all at once. Over low heat, cook and stir until mixture forms into a ball.

3. Remove from heat. Vigorously beat in eggs, 1 at a time, until mixture is smooth and shiny. Add vanilla, mixing well.

4. Drop rounded teaspoonfuls of dough into deep hot oil, 375 degrees. Fry beignets, a few at a time, until golden on all sides; beignets may turn automatically.

5. Remove with slotted spoon to drain on paper toweling. Sprinkle with powdered sugar before serving.

Good served with: strong freshly brewed coffee.

TIPS: If you wish, 1/2 teaspoon grated orange rind can be added to the dough. Or in place of powdered sugar, sprinkle with a combination of 1/2 cup granulated sugar and 1 teaspoon cinnamon. Correct frying temperature is important. Use thermometer for best results.
