DELI RICE PUDDING 
1 qt. milk
1/2 c. rice (least expensive one)
2 eggs, beaten
1/2 c. sugar
1 tsp. vanilla
Cinnamon to taste

Cook milk and rice together. Add 1 cup water to prevent overboiling, stir constantly, until rice is tender. Add eggs, sugar and vanilla, mix well. Pour into small pan (or casserole dish) to cool. Sprinkle cinnamon over top. Serves 6.
