PEACH PUDDING TOPPING | |
1 (16 oz.) can sliced peaches in natural juice Cut sliced peaches into chunks. Drain fruit and thicken juice with 2 teaspoons cornstarch. Add 1/2 teaspoon cinnamon plus some brown sugar or artificial sweetener if desired. Bring to a boil. Reduce heat and simmer a few minutes until clear and thickened. Add a little vanilla, if desired. Add drained fruit. Stir. Serve over rice pudding. |
