SICILIAN MEAT ROLL 
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
2 tbsp. chopped parsley
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 clove garlic
2 lbs. ground beef
4 to 8 thin slices ham
8 oz. Mozzarella cheese, shredded
3 slices Mozzarella cheese

1. Preheat oven to 350 degrees.

2. Combine first 8 ingredients and mix well with ground beef. Pat into a 12 x 10 inch rectangle and arrange ham slices on top, leaving a small margin.

3. Sprinkle shredded cheese over ham and, starting from short end, roll meat. Seal edges and ends and place seam down in a 9 x 13 inch pan. Bake for 1 hour and 15 minutes.

4. Place cheese slices on top just before removing from oven.
