SICILIAN MEAT ROLL 
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
2 tbsp. parsley
1/4 tsp. salt
1/4 tsp. pepper
1 sm. clove garlic, minced
2 lb. hamburger
1 lb. ham, cubed
6 oz. Mozzarella cheese

Combine eggs, bread crumbs, tomato juice, parsley, salt, pepper and garlic. Stir in hamburger, mixing well. On foil make a rectangle with meat mixture. Arrange ham on top of meat, then cheese, then roll it up. Wrap in foil. Bake at 350 degrees for approximately 1 hour 15 minutes.

NOTE: Center will be pink from ham. (Sometimes I sprinkle more cheese on top at the last 5 minutes of baking time.)
