STIR-FRY VEGETABLES 
3 carrots, peeled & sliced into 1/4" slices
1 stalk broccoli flower, removed from stem
1 lg. onion, sliced lengthwise
1 lb. mushrooms, sliced
1/2 sm. head cauliflower, broken into flowerettes
1 sm. zucchini, 1/4" slices
Vegetable oil

Place small amount of oil in skillet and heat to just below smoking point. Add carrots and cauliflower and stir almost constantly for 2 minutes; add broccoli and onion and stir for another 2 minutes; add remaining zucchini and mushrooms and stir fry one minute. Add 2 to 3 tablespoons water, cover and steam 1 to 2 minutes, stirring once or twice and adding a little more water if vegetables appear dry. Season to taste with salt and pepper. Garnish with whole peanuts or cashews if desired.

One large clove garlic, pressed, may be stir fried in oil for 30 seconds and then begin adding vegetables.

Great served over plain baked potatoes as a quick, nutritional meal!
