CREOLE EGGS 
1 tbsp. butter
1 tbsp. flour
1 c. milk
1/2 doz. hard boiled eggs
1/2 c. green pepper, chopped fine
1/2 c. celery, chopped fine
1/2 c. onions, chopped fine
1 can tomatoes
1 can sm. mushrooms
1 tbsp. butter

Fry pepper, celery, onion in butter until tender (20 minutes). Add tomatoes, cook a little. Mix white sauce, mushrooms and cooked vegetables in casserole with sliced eggs, sprinkle with buttered bread crumbs and bake until hot. Serves 6 or 8.
