WHITE CHILI | |
1 (16 oz.) pkg. Great Northern beans 2 lg. whole chicken breasts (cubed), boned and skinned 2 med. onions (chopped) 2 cloves garlic, minced 6 chicken bouillon cubes 1 tsp. oregano 1 tsp. cumin 1/4 tsp. cloves 2 tbsp. cooking oil Salt and pepper to taste Boil beans for 2 hours in 4 cups water. Boil chicken in 2 cups water until tender, then cube. Add chicken to beans, including the water it was boiled in. Saute onions in oil until transparent. Add spices, add mixture to beans and chicken, add more water if necessary. Serve with shredded Monterey Jack cheese on top. |
