HOLIDAY CAULIFLOWER 
1 head cauliflower
4 tbsp. butter
1 tbsp. flour
1 c. milk
1 egg yolk
2 tbsp. heavy cream
1/4 c. bread crumbs
Sliced almonds
1 1/2 c. shredded cheese (cheddar)

In large sauce pan. Cook cauliflower in 2 to 3 inches of water for 15 to 20 minutes. Drain and place in oven serving dish. Keep warm.

In medium saucepan melt 2 tablespoons butter. Add flour and stir until well blended. Add milk slowly, stir mixture until it comes to a boil and thickens. Remove from heat. In a cup combine cream and yolk. Stir into sauce. In small pan melt 2 tablespoons butter. Saute almonds until golden brown. Stir in bread crumbs. Add cheese to casserole dish and top with almonds and bread crumbs. Bake at 375 degrees for 10 to 15 minutes.
