COLD PEACH STRAWBERRY SOUP | |
2 slices peeled peach or 2 nectarines, sliced (in a pinch canned peaches will do) 2 c. sliced strawberries 1 (8 oz.) carton each peach & strawberry yogurt (Swiss style) 3-4 tbsp. sugar 4 tbsp. lemon juice Fresh mint sprigs In a food processor, combine all ingredients except mint; process until smooth. Pour into bowl, cover and refrigerate 2-3 hours or until thoroughly chilled. Spoon into soup bowls; garnish with mint as desired (nicely garnished with strawberries too!) 8 servings. |
