COLD CUCUMBER SOUP 
4 1/2 c. peeled, seeded cucumbers, chopped
1 c. water
1 1/2 c. plain nonfat yogurt
1 clove garlic
4 fresh mint leaves
Dash of nutmeg
1/4 tsp. Tabasco sauce
1 1/2 tbsp. honey
1 to 1 1/2 tsp. salt
1 1/2 tsp. dill
1 carrot

Place in blender, add cucumbers last, leave chunky. Chill at least 2 hours. Garnish with chopped chives, paprika or mint. Try this on a hot day with large cucumbers.
