STUFFED MIRLETONS | |
3 mirletons 1 onion, chopped 1 clove garlic, chopped 1 tbsp. butter 1 sprig parsley, chopped (or dry parsley) 1 sprig thyme, minced 1 bay leaf 1 1/2 doz. shrimp or canned crab meat or 1 c. ham or bacon or ground meat 3/4 c. bread crumbs Salt & pepper to taste Cut mirletons in half and put into boiling water which has been salted. Boil until tender, let cool. Scoop out the tender pulp and drain. If stuffing, leave the shell in good condition. Brown onion and garlic in butter, add parsley, thyme and bay leaf. Salt and pepper to taste. Add bread crumbs which have been seasoned, soaked and squeezed. Fry pulp for 5 minutes. Add shrimp to mixture. Mix well and fill shells with stuffing. Place additional crumbs on top and dot each shell with butter. Place in 350 degree oven for 15 minutes until golden brown. Makes 6 servings. |
