OLD FASHIONED CORN CHOWDER | |
1/2 c. diced salt pork 1 lg. onion, chopped 2 c. boiling water 2 c. diced raw potatoes 2 c. corn kernels, fresh, frozen or canned 1 1/2 c. rich milk or 1 c. light cream and 1/2 cup milk Salt and pepper to taste 4 unsalted soda crackers, split in halves Fry salt pork in large saucepan to release all fat and until crisp. Add onion and saute until tender. Pour in water and add potatoes. Cook slowly, covered, about 10 minutes until potatoes are just tender. Add corn and cook 5 minutes longer for fresh or frozen. 2 minutes for canned. Add milk, salt, and pepper and leave on the stove long enough to heat through. Serve in soup plates ladled over the crackers. Serves 4. |
