CHOCOLATE TRUFFLES 
12 oz. semi-sweet chocolate (a lg. pkg. of Toll House morsels has 12 oz.)
4 tbsp. butter
2 egg yolks
2 tbsp. confectioners' sugar (sift if lumpy)
1/4 c. heavy cream
For coating: powdered sugar, finely ground nuts, grated chocolate, powdered chocolate or chocolate sprinkles

Put the chocolate in a microwave safe dish and melt, according to package directions. Stir in the butter until it is melted and the mixture is well blended.

While the chocolate is melting, whisk the egg yolks in a small bowl with the cream and sugar. Gradually whisk the warm chocolate into the yolk mixture. Chill until firm. The mixture should be firm enough to be shaped into 1" balls.

As you make a truffle, roll it in the selected coating. Place in tiny candy cups, if desired. Store finished truffles in a cool place.

Since microwave ovens vary in power, you may need to adjust your cooking time.
