ITALIAN QUICHE 
1/2 stick pie crust mix
1 tbsp. water
1 c. Ricotta cheese
3 eggs
1/4 c. thinly sliced pepperoni, diced
1 tsp. oregano, crumbled
1/4 tsp. salt
3/4 c. Jack cheese

Prepare pie crust mix as package directs, using 1 tablespoon water. Roll out to fit 7-inch quiche dish. Prebake as package directs. Mix Ricotta cheese with eggs, pepperoni, oregano, salt and 1/2 cup Jack cheese. Spoon into shell. Bake at 350 degrees for 30 minutes or until center is set. Sprinkle with remaining Jack cheese and return to oven for about 5 minutes.
