1 small pkg lime jello
1 cup boiling water
1 can crushed pineapple
1/2 cup sugar
2 cups Longhorn cheese, shredded
2 cups whipped cream (Cool Whip is fine)

Dissolve jello in boiling water. In saucepan, heat pineapple and sugar until dissolved. Add to jello mix. Chill in refrigerator until partially set. Gently fold in cheese and whipped cream. Chill in refrigerator until set.
