PIMENTO CHEESE SPREAD 
1 lb. boxed soft cheese
1 c. mayonnaise
1/2 c. super-finely chopped sweet or sour pickles
4 oz. of the cheapest pimentos on your shelf

FOR VARIATIONS:

Juice from 1 jar pimentos
4 oz. chopped salad olives (the cheapest pimento-stuffed green olives you can buy)
Chopped onions, to taste

Grate the cheese coarsely (use the large openings of a grater or food processor). Now the fun part - layer ingredients as if you are making lasagna. Place a large piece of waxed paper or plastic wrap on the counter first, then start the process:

Put down a layer of grated cheese, mayonnaise, pimentos and handful of pickles. Use a spatula to fold it over and over, starting from the bottom.

Repeat the process, folding again and again until you have used all of your ingredients. I divide this up into two batches. Put it in jars, seal well and pop into the refrigerator.
