PIMENTO CHEESE SPREAD 
1 lb. Longhorn cheese
1/4 c. chopped pickles
4 to 5 hard-cooked eggs
1 sm. jar pimentos, drained
1 tbsp. grated onion
1/4 c. mayonnaise or more
Pepper

Grind cheese, pickles, eggs and pimentos. Mix by hand with grated onion and 1/4 cup mayonnaise, enough to bind. Season with pepper. Use as a sandwich spread or with crackers.

The BEST pimento cheese ever. This is the recipe I grew up on (less the onions and Miracle Whip instread of Mayo). I can eat the whole thing myself. Easiest way to make it is to run the cheese, pickles and eggs through a course meat grinder and then add the pimentos and mayonnaise.
