PIMENTO CHEESE SPREAD 
1 lb. Colby or mild Cheddar cheese
1 sm. jar of pimentos, drained
1 c. mayonnaise

Shred cheese in food processor. Mix cheese, pimento and mayonnaise in large bowl. Mix well. Great as a sandwich spread or for crackers.

Good basic recipe, though I prefer sharp or at least medium Cheddar. And I use the 4-ounce jar of pimentos and dice them. I like to experiment with additions to the basic ingredients. Pimento cheese makes terrific tea sandwiches!

When I was a kid, much-beloved by her grandmother, Granny used to make homemade pimento cheese spread for me. I could swear she used cottage cheese and a shot of hot sauce in hers, in addition to extra-sharp Cheddar cheese and a jar of pimentos (I'm not sure about the mayonnaise, but it was probably there as well). She only gave me the recipe once, by mouth, like a story she loved to tell. Has anyone else heard of this version, and, if so, can you refresh my memory? (She never used eggs or anything else, just a few ingredients, toasted the bread, and ran it under the broiler or toaster oven long enough to melt the cheese.) Heaven!

I just finished this recipe. Absolutely delightful. We added about 1/8c of onions diced finely and 1/3c of cream cheese. Great on crackers or broiled on toast. As Trish said, HEAVEN!
