Eggs
Corn tortillas
Salt
Cooking oil

Per serving preparation recommended. Take 2 or 3 tortillas. Tear them in half. Pat them together and tear them in half again. Put them together and tear off half-dollar size pieces until done. Set aside.

Place enough oil in a pan to fry all of the tortillas. Before frying tortillas, bring to a high heat. Add the tortillas. Stir often until gently browned and crisp. Break eggs on top. Do not stir until the eggs cook a bit. Turn slowly as the eggs cook. You want the yolks and whites to cook separately. You're done when eggs are cooked. Salt to taste. Good with hot sauce on top and refried beans and guacamole on the side.
