CUCUMBER SALAD 
6 cucumbers
Salt
1/2 - 3/4 c. water
1/2 c. cider vinegar
2 1/2 tbsp. sugar
2 tsp. salt
Dash of pepper
2 or 3 green onions, thinly sliced

Slice the cucumbers thinly and place in a bowl. Sprinkle with salt. Let stand 15 minutes. Drain and rinse with cold water before using. Combine the water, vinegar, sugar, salt and pepper in a small saucepan and bring to a boil. Sprinkle the drained and rinsed cucumbers with the green onions. Pour the vinegar dressing over them and chill at least 3 hours before serving. Serves 12.
