2 (16 oz.) cut yams, drained
1 c. sugar
1 c. salad oil
2 eggs, beaten
1 tsp. baking soda
1 box INSTANT coconut pie filling
1 1/2 c. flour
1/4 tsp. cinnamon
1 tsp. baking powder
1/2 c. chopped pecans or walnuts

Mix sugar, potatoes, oil, eggs together - sift dry ingredients and add pie filling - add nuts. Grease pan and bake in 350 degree oven. Bread is done when toothpick is inserted and comes out clean.
