COFFEE CAKE (KUCHEN) 
2 1/4 c. milk
1 pkg. + 1 tsp. yeast
1/2 c. warm water
Flour
1 egg
1/3 c. sugar
1/3 c. shortening

Dissolve yeast in warm water with 1 teaspoon sugar. Scald milk. When cool mix with yeast and add enough flour to make a thin batter. Set aside to rise. When light, add egg, sugar, shortening and mix well. Add enough flour to make a soft dough. Knead until well mixed. Allow to rise and when light, roll out on floured surface and put in 9"x13" greased pan. Let rise again and then poke air pockets with a fork before baking. Various toppings may be used. Bake at 375 degrees. Makes 3 cakes.
