LE GUIGNOLET (CHERRY HOLIDAY WINE) | |
Prepare in August or September for the following holiday season. Gather 100 sour cherry leaves for each liter of wine to be made. Put 100 leaves to one liter of wine in a covered but not closed container for 5 days. Take out leaves. Add 1/3 pound sugar to each bottle of wine (750 ml.) Add 1 small juice glass of kirsch (schnappes or eau-de-vie) to each bottle. Recork. Let bottles sit on their sides for 3 months during refermentation. Keep in refrigerator after open. |
