COLCANNON 
1 lb. Red Bliss potatoes
1 small Spanish onion, diced
1 tbsp. white vinegar
1/4 tsp. black pepper
8 slices of bacon, diced
1 c. green cabbage, shredded
1 tsp. salt
1 bunch green onions

Boil potatoes in water until tender; drain and set aside. In medium frying pan, cook bacon until brown. Add diced Spanish onion and saut with bacon until translucent. Add cabbage and vinegar and cook until cabbage is tender.

Mash warm potatoes; season with salt, pepper and chopped green onion. Add in bacon, onion and cabbage mixture.
