HOME MADE BEEF STICK 
5 lbs. ground beef (not lean)
5 tsp. Tenderquick salt (used to cure meat)
2 1/2 tsp. garlic salt
1 tsp. hickory smoked salt
2 1/2 tsp. coarse pepper
2 1/2 tsp. mustard seed

Break ground beef into pieces in a large mixing bowl.

Mix together salts, pepper and mustard seed. Gradually add to meat, mixing together with hands. Refrigerate covered until next day. Mix again and return to refrigerator covered.

On third day, form into 5 identical log-shaped loaves, 8 inches long and 2 inches in diameter. Position the logs 2 inches apart on rack in broiler pan. Center in preheated 150 degree oven for 8 hours. Turn every 2 hours.

When finished, exterior will be dark and glossy and inside will be pink. It is delicious hot! Cool, refrigerate and slice thinly to serve. Good with cream cheese on crackers. May be stored a couple weeks in the refrigerator or frozen for 6 weeks.
