BEEF STICK 
2 1/2 lb. ground chuck
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. basil
1/4 tsp. onion salt
1/4 tsp. garlic powder
1 tbsp. liquid smoke
1 1/2 tbsp. mustard seed
2 tbsp. tender quick salt
Options:
1 tbsp. cracked pepper corn
1/2 tsp. mace

Mix by hand. Shape into logs 6 inches long. Wrap in saran wrap. Refrigerate 24 hours. Be sure to seal. Unwrap and bake 1 hour at 300 degrees. Beat excess grease with pepper towel. Best to cook on broiler pan.
